On Ermou, opposite Agia Sofia church, this all-day cafe-bar brings a composed, unhurried presence to one of the busiest stretches of the center. Coffee carries the morning; by early evening the room shifts easily into cocktails, spirits, and plates of cheese and cured meats. The setting is polished without being stiff, and it accommodates the neighborhood’s pace in a way that makes you want to come back at different hours.

The Toumba outpost of Grasshopper covers a lot of ground: coffee, beers, cocktails, brunch plates, sweets, sandwiches, pizza. The self-service setup keeps things moving, the atmosphere stays young and easy, and the range makes it the kind of neighborhood spot people fold into their week without much deliberation.

Sisou Skg

Smaller and more food-focused than most of the city’s recent openings, Sisou leads with coffee but earns its place through what comes with it: sandwiches, focaccia, slow-fermented breads, and house sweets built around ingredients like Metsovo kasseri and Montgomery cheddar. Milk pie and rice pudding round out the sweet side. It is built for daily use, which gives it more staying power than places designed only for first impressions.

Aeras

Near the port, Aeras follows a rhythm Thessaloniki has always liked: brunch and coffee early, then drinks and a livelier atmosphere as the day opens up. Kagianas, Japanese pancakes, burgers, and sandwiches give it a solid daytime draw. Later, the music rises, the room fills, and the reason for going shifts accordingly.

In Charilaou, Ovylos draws from the Mediterranean and gives the neighborhood a proper restaurant destination outside the familiar center-of-town circuit. The menu moves through eggs with soutzouki, tomato and feta, grilled pumpkin with gorgonzola, spicy honey and walnut, smoked shank with eggplant purée, and braised beef with trahana. Best Opening in Thessaloniki / Prosexws

Set in the garden of the Archaeological Museum of Thessaloniki, Prosexws (read Prosexós, meaning upcoming) sits at a different pace from the usual city-center openings. It works for coffee, for a drink, or as part of an evening plan, but what lingers is the setting itself and the fact that the city keeps finding ways to expand through places like this rather than only through new central addresses.
