«Ο άνθρωπος είναι ό,τι τρώει, πίνει και σκέπτεται», είπε, έγραψε και άφησε ως διατροφική κληρονομιά ο Σάμιος φιλόσοφος Πυθαγόρας, ο θεωρούμενος και πρώτος χορτοφάγος της παγκόσμιας Ιστορίας. Στη Σάμο, ένα νησί με οργιώδη βλάστηση, πλούσιο ανάγλυφο, θαλάσσιο πλούτο και μέγεθος ικανό για αγροτική παραγωγή, το καλό φαγητό είναι, σχεδόν, αυτονόητο και οι προτάσεις σε ολόκληρη τη νήσο, αρκετές και διαφορετικές. Παραφράζοντας το ρητό του Πυθαγόρα, ο σωστός ταξιδιώτης είναι αυτός που τρώει, πίνει και σκέπτεται.
«Ορίζοντας»
Στον Πλάτανο, το ψηλότερο χωριό της Σάμου, σε υψόμετρο 550 μέτρων, με θέα από τις τεράστιες τζαμαρίες του το μισό νησί αλλά και τους Φούρνους, την Ικαρία και την Πάτμο από τη μια πλευρά, τα τουρκικά παράλια από την άλλη και το όρος Κέρκης να δεσπόζει στη μέση, ο «Ορίζοντας» ανήκει στις απαραίτητες γευστικές επιλογές για κάθε ταξιδιώτη στο νησί. Ο Βασίλειος Σκουρφούντας, είναι ο υπεύθυνος για την απλή, καθαρή μαγειρική που προσφέρει, καθώς οι μετρημένες προσθήκες στις συνταγές του, εποχικών υλικών, αρωμάτων και γεύσεων που έχει τολμήσει, προσθέτουν στο αποτέλεσμα αρμονικά και αθόρυβα. Η επιτυχία των πιάτων στον «Ορίζοντα» επιβραβεύεται από κάθε επισκέπτη και, πολλές φορές σταματούν οι συζητήσεις στις παρέες για λίγο στην άφιξη του επόμενου εδέσματος.

Πολύ νόστιμο το ριζότο «γεμιστά» με τα λαχανικά να εναλλάσσονται ανάλογα στην εποχή, η βετούλα γιουβέτσι, η ψητή μελιτζάνα με πιπεριά Φλωρίνης, ο πουρές ρεβιθιού με τα ψητά παντζάρια αλλά ρωτήστε και για πιάτα που τυχόν υπάρχουν και δε βρίσκονται στον κατάλογο, όπως η σούπα μπουγιαμπέσα με κρόκο Κοζάνης στο ζωμό από ροφό με λαβράκι, μύδι, γαρίδα και λάδι τσίλι αλλά και μια απίθανη συναγρίδα φρικασέ με σπανάκι και αλμύρα που είχα την τύχη να γευτώ κατά τη δική μου επίσκεψη.

«Μερμιζέλι»
Τέρμα δεξιά στο λιμάνι του Πυθαγόρειου, δίπλα στο καρνάγιο, στην ήσυχη πλευρά του, ίσως, πιο τουριστικού οικισμού του νησιού, η Αλεξάνδρα Μαγκλή κερδίζει με ευκολία πολλά από τα στοιχήματα στο χώρο της εστίασης και της φιλοξενίας. Η φήμη της πάντα ευδιάθετης και ευχάριστης οικοδέσποινας, αλλά και αυτή του καλαίσθητου περιβάλλοντος, με γήινα υλικά, θερμούς φωτισμούς και ξύλο και, φυσικά, των απίθανων γεύσεων που επιμελείται και μαγειρεύει η ίδια, επιβεβαιώνεται εύκολα με μια επίσκεψη. Χωρίς να την έχω ενημερώσει για την επίσκεψή μου, γνωρίζει καλά πως θα με συστήσει στις γεύσεις του εστιατορίου της ξεκινώντας με τις αγκινάρες ξυδιαστές με κρίταμο ντόπιο από την παραλία Κέδρος στο βορρά και κάπαρη από την αγαπημένη της Τήνο, ρεγγοσαλάτα βελούδινη με φύλλα κάπαρης, ωμή σαμιώτικη γαρίδα με φρέσκια ρίγανη, ανθό αλατιού και λάιμ, φούσκες σερβιρισμένες μαζί με μπουκιές παξιμαδάκια με μους από φούσκες αλλά και τυριά δικής της παραγωγής και πειραματικής επεξεργασίας και ωρίμανσης τα οποία ξυπνούν και το πιο άπειρο, γευστικά, στόμα.

Μερμιζέλι είναι μια σαλάτα από την Κάλυμνο, τόπο καταγωγής της Αλεξάνδρας, με τοματίνια και μελιτζάνες, την οποία προσφέρει και η ίδια στο εστιατόριό της εδώ, στο Πυθαγόρειο, από το 2017 όταν και το ξεκίνησε. Η καλά ενημερωμένη λίστα κρασιών, συμπληρώνει την γευστική εμπειρία.

«Το Μαγαζί του Γιάννη»
Ξεκίνησε το 2013 ως συνοικιακό καφενείο σε άλλο σημείο στην πόλη της Σάμου και από τον Απρίλιο του 2015 βρήκαν το χώρο όπου στεγάζονται μέχρι και σήμερα. Ο Γιάννης και η Βούλα Γαλανού είχαν πάντα μια τεράστια αγάπη για την λαϊκή κουλτούρα αλλά ειδικότερα για την έννοια «καφενείο», με πρότυπα κάποια παραδοσιακά μαγαζάκια στο Πάνω Βαθύ. Το καφενείο ως χώρος συνάντησης αλλά και «διαχείρισης του ελεύθερου χρόνου», όπως μου εξηγεί η Βούλα, η οποία εργάζονταν επί 25 χρόνια ως δημοσιογράφος και παραγωγός εκπομπών με θέματα αστικού και λαϊκού πολιτισμού και κυρίως του ρεμπέτικου. Βάλτε στην εξίσωση και την αγάπη και ικανότητα του Γιάννη στη μαγειρική και έχουμε ως αποτέλεσμα το απίθανο αυτό ουζερί, στον παράλληλο δρόμο της προκυμαίας, πίσω από την πρώτη σειρά κτιρίων, με δείγματα ζωγραφικά αλλά και φωτογραφικά λαϊκής κουλτούρας στους τοίχους, ήχους από ζωντανή μουσική, Παρασκευή και Σάββατο κυρίως, πολύχρωμο και πολύπλευρο κόσμο ως πελάτες, πολλούς μόνιμους θαμώνες, ντόπιους αλλά και γείτονες Τούρκους και μαζί με τους απίθανους μεζέδες, η πράξη έχει συντελεστεί.

Οι μυρωδιές από τα ολόφρεσκα ψητά θαλασσινά, από τα λαχταριστά τηγανητά καλαμαράκια και τις κομμένες στο χέρι πατάτες, ξεχύνονται στο δρομάκι μαζί με τους ήχους από το μπουζούκι και την κιθάρα αλλά και τα λόγια των τραγουδιών, ελληνικά αλλά και τούρκικα κάποιες στιγμές, ικανοποίηση επιθυμιών των απλών και χαρούμενων επισκεπτών από απέναντι. Φρέσκιες σαλάτες, εποχικά λαχανικά αλλά και ένα πιάτο μελιτζάνες με ρεβίθια σε σάλτσα τομάτας παντρεμένα στο φούρνο, σουξέ του μαγαζιού, συμπληρώνουν τις επιλογές. Τα ντόπια, σαμιώτικα ούζα είναι ό,τι πιο ταιριαστό σε όλη την προαναφερθείσα κατάσταση.

«Άμπελος»
Όταν η ίδια ερώτηση σε πολλούς διαφορετικούς ανθρώπους κατά τη διάρκεια των διαδρομών στο νησί, παίρνει την ίδια απάντηση, μάλλον κάτι σωστό συμβαίνει. «Να πάτε στην Άμπελο να φάτε λαχανοντολμάδες», ήταν η απόκριση με κάποια διαφορά στη σειρά των λέξεων κάθε φορά αλλά όχι στο νόημα. Η ομώνυμη ταβέρνα στην όμορφη πλατεία του αμφιθεατρικά χτισμένου χωριού στο βόρειο τμήμα της Σάμου, αποδείχτηκε πολλά περισσότερα από τους, όντως, θεϊκούς (παραμονές Πάσχα τους επισκεφθήκαμε) λαχανοντολμάδες. Η Σοφία Λογαρά με υποδέχτηκε με ευγένεια και πολύ καλή διάθεση αν αναλογιστεί κανείς την ημέρα που πήγα (Κυριακή) και την ώρα (μεσημέρι) και επικρατούσε η απόλυτη κινητικότητα.

Η μητέρα, Βασιλική Λογαρά, με καταγωγή από το Ηράκλειο, «έφερε την Κρήτη στη Σάμο» όπως μου φώναξε μέσα από την κουζίνα ετοιμάζοντας τα διάφορα καλούδια. Ρακή στο ποτήρι, λαχανοντολμάδες στο πιάτο και τα σμυρνέικα σουτζουκάκια και το αρνί με αγκινάρες στη γευστική δοκιμή, πείθουν και τους άπιστους. Πριν από 23 χρόνια ξεκίνησε ως καφενές το εστιατόριο, με τη μητέρα στα μαγειρευτά και το μπαμπά Δημήτρη στα ψητά. Υλικά, τυριά, ελαιόλαδο, ελιές, κρασί, όλα προέρχονται από το χωριό και τη γύρω περιοχή και η επιτυχία, όπως μου λένε κάποιοι τακτικοί επισκέπτες, δεν έχει βλάψει καθόλου την ποιότητα.

«Αρχόντισσα»
Βαθιά μέσα στο βουνό, σε ένα τοπίο που θυμίζει περισσότερο τα Μαστοροχώρια στην Κόνιτσα και λιγότερο νησί, πάνω από τους Καταρράκτες Ποταμιού, κοντά στο Καρλόβασι, όλα δείχνουν να ταιριάζουν. Η ξύλινη κατασκευή, τα μπαλκόνια μέσα στο πράσινο, ο ήχος του καταρράκτη σε συνδυασμό με τη χαμηλότερη θερμοκρασία και την απίστευτη μυρωδιά του ξυλόφουρνου, προϊδεάζουν και για την κατάλληλη γαστρονομική κατεύθυνση. Έμφαση δίδεται στο κρέας με απόλυτα σουξέ το γεμιστό κατσίκι, το χοιρινό κότσι και το κοντοσούβλι αλλά και με επιλογές σε κοτόπουλο, μπιφτέκια, πανσέτα, σεφταλιές αλλά και 1-2 μαγειρευτά τα οποία υπάρχουν πάντα μαζί με διάφορους μεζέδες, όπως το καταπληκτικό μπουγιουρντί.

Η οικογενειακή επιχείρηση ξεκίνησε το 2004 όταν ο Κώστας Κεφαλιανός, πατέρας της Δήμητρας που μου τα εξιστορεί, και μάστορας στον ξυλόφουρνο, βλέποντας τους πολλούς κατασκηνωτές και μονοήμερους επισκέπτες στους καταρράκτες να μην έχουν καμία επιλογή, τους πρόσφερε την «Αρχόντισσα» και από τότε η κρυμμένη μέσα στη φύση ταβέρνα, έγινε η ίδια προορισμός. Ακόμη και σήμερα, πολλοί επισκέπτες επιλέγουν την πεζοπορική διαδρομή αντί του χωματόδρομου ως πρόσβαση για μια πιο ολοκληρωμένη εμπειρία.

Η Σάμος, ίσως επειδή δεν έχει «διαβρωθεί», ακόμη τουλάχιστον, από το φαινόμενο του υπερτουρισμού, κρατάει ψηλά την ποιότητα στην εστίαση με αποτέλεσμα ο επισκέπτης να τρώει σχεδόν παντού καλά και απλά. Συμπληρωματικά λοιπόν στις προαναφερθείσες προτάσεις, οι οποίες δοκιμάστηκαν κανονικά, αξίζει μια επίσκεψη στο «Γιαλό», (Τηλ. 2273037170, 6981186706) στον Όρμο Μαραθόκαμπου όπου η κυρία Ντίνα Σταθοπούλου κρατά εδώ και 22 χρόνια ψηλά τον πήχη του καλού μαγειρευτού, στο ουζερί «Ζεν», (Τηλ. 22730 80983) στο λιμάνι της Σάμου με πολύ καλούς μεζέδες, στο «Λουκά», (Τηλ. 2273094541) στις όμορφες Μανωλάτες.
Ακόμη, στο wine bar «SOLON», (Τηλ. 2273062440, 6945292860) στο λιμάνι του Πυθαγόρειου με μεγάλη επιλογή σε οίνους, αλλαντικά, τυριά αλλά και με επιλογές sushi, στο «Διόνυσο», (Τηλ. 2273030120) στο Νέο Καρλόβασι, στην πλατεία 8ης Μαΐου για ένα πεντανόστιμο γιουβέτσι με καραβίδες, μεταξύ άλλων και, αν σας φέρει ο δρόμος μέχρι το τέλος του δρόμου δυτικά, στην «Ομόνια», στο χωριό Δρακαίοι όπου η κυρία Ελευθερία Αγγελίνα μαγειρεύει για τους περιπατητές και όχι μόνο, ακόμη και κουνέλι στιφάδο.
