Η Ύδρα έχει ελάχιστες φυσικές πηγές και έτσι, ιστορικά, όλα τα φαγώσιμα προϊόντα (και όχι μόνο) έρχονται συνήθως από τη γειτονική Πελοπόννησο. Οι κάτοικοι ασχολήθηκαν με την αλιεία και το εμπόριο και αυτή η μεγάλη ναυτική εμπειρία τους, είχε ως αποτέλεσμα τη δημιουργία του θρυλικού υδραίικου πολεμικού στόλου που συνεισέφερε τα μέγιστα κατά τη διάρκεια της επανάστασης του 1821.
Σήμερα, η παραδοσιακή κουζίνα του νησιού εκφράζεται με τα ψάρια και τα θαλασσινά -ένα χαρακτηριστικό πιάτο είναι τα μπαρμπούνια ή οι ζαργάνες σαβόρο-, το κρασάτο χταπόδι, τα γεμιστά καλαμαράκια, οι σουπιές με πιλάφι με το μελάνι τους και η κακαβιά. Ακόμη, σερβίρονται γκόγκες , κοντά χειροποίητα ζυμαρικά της αρβανίτικης κουζίνας, χορτόπιτες, σαλιγκάρια στιφάδο.
Από την κρεατοφαγική κουζίνα, τα πιο δημοφιλή πιάτα είναι το αρνάκι καπαμάς, το αρνάκι στο φούρνο και το μοσχάρι με κυδώνια (το χειμώνα). Διάσημα είναι τα υδραίικα αμυγδαλωτά με ανθόνερο σε σχήμα που μοιάζει με αχλαδάκι. Λιγότερο γνωστές είναι οι λαλαγγίτες (τηγανίτες) που σερβίρονται με μέλι και πιο παλιά με πετιμέζι.
Οινική ταυτότητα Στο νησί δεν καλλιεργούνται παρά ελάχιστα αμπέλια και η οινοποίηση γίνεται ερασιτεχνικά για αυτοκατανάλωση.
